I woke up this morning and knew I wanted something pumpkiny. Earlier this week, I was finally able to find pumpkin puree at the grocery store! It’s always a hot commodity at the beginning of the fall season. (*Note – this is not pumpkin pie filling, it’s pumpkin puree. The other stuff is loaded with sugar.)
I’m a big fan of Starbucks’ pumpkin spice latte, but for a grande size you pay almost $5! So I thought I’d try making one. I found this recipe and it worked out pretty well! I started by brewing a strong cup of coffee (double the amount of grinds as usual).
Then I combined:
– 1 cup of unsweetened almond milk
– 2 Tbs pumpkin puree
– 1 Tbs sugar
– 1/4 tsp pumpkin pie spice (if you don’t have this just use cinnamon and nutmeg)
When it was hot, I took it off the heat and added 1Tbs vanilla extract. The recipe then calls for you to put this mixture in the blender or use a frother to make it foamy. I won’t lie – I needed my coffee, got lazy, and skipped this step. So I guess this is technically a misto, not a latte. Oh well – tomato, tomato…I know that didn’t translate in text, but you know what I meant.
…and, if you so desire, top with more cinnamon and pumpkin pie spice!
Mmmmm, this was goooood. It wasn’t exactly the same flavors as a Starbucks PSL, but it’s absolutely something I’ll make again! I think next time I’ll add even more pumpkin. 🙂

I love Starbucks but I also like Coffee Bean. Did you hear that Starbucks is going to start serving a lighter blend of coffee, because a lot of people think their blends are too strong? It’ll be interesting to try!
