Pumpkin oatmeal muffins with cinnamon walnut streusel

I know this recipe involves the exact same ingredients as my breakfast post, but I’ve been wanting to bake something with pumpkin and today just was the day to to do it. I followed Julie’s recipe for the muffins, except I used unsweetened almond milk instead of regular milk.

Just mix the dry ingredients with the wet ones…
 

…to make a lovely, orange, lumpy butter.

I decided I wanted to pretty my muffins up a little by adding a topping, so I went with a cinnamon walnut streusel. I cut up 2 Tbs of cold butter into little pieces, added in 2 Tbs of brown sugar  and 1/2 tsp of cinnamon, crumbled it all together with my fingers, and put it on top of the muffins.

Oh. My. Gosh…the smell that took over my apartment while these were baking was amazzzzing. And they tasted just as good! The pumpkin puree keeps them super moist, and the streusel reminded me of my mom’s homemade coffee cake! It was such a great addition to the muffins.

A pumpkiny kind of morning

I woke up chilly this morning, which usually means breakfast is a warm, creamy, flavorful bowl of oats! And, because it’s fall, of course pumpkin had to be involved.

In the mix:
– 1/2 cup water
– 1/2 cup unsweetened almond milk
– 1/2 cup rolled oats
– 1/2 of an overripe frozen banana (add this in when you add the oats in, and they literally MELT into the oatmeal!)
– 1/2 scoop vanilla protein powder
– 1/3-ish cup of pumpkin puree
– 1 spoonful of Trader Joe’s pumpkin butter (for sweetness!)
– generous shakes of pumpkin pie spice

Mmmm, that bowl warmed me right up!

Make your own pumpkin spice latte

I woke up this morning and knew I wanted something pumpkiny. Earlier this week, I was finally able to find pumpkin puree at the grocery store! It’s always a hot commodity at the beginning of the fall season. (*Note – this is not pumpkin pie filling, it’s pumpkin puree. The other stuff is loaded with sugar.)

I’m a big fan of Starbucks’ pumpkin spice latte, but for a grande size you pay almost $5! So I thought I’d try making one. I found this recipe and it worked out pretty well! I started by brewing a strong cup of coffee (double the amount of grinds as usual).

Then I combined:
– 1 cup of unsweetened almond milk
– 2 Tbs pumpkin puree
– 1 Tbs sugar
– 1/4 tsp pumpkin pie spice (if you don’t have this just use cinnamon and nutmeg)

I heated this up on the stove until it was piping hot but not boiling.

When it was hot, I took it off the heat and added 1Tbs vanilla extract. The recipe then calls for you to put this mixture in the blender or use a frother to make it foamy. I won’t lie – I needed my coffee, got lazy, and skipped this step. So I guess this is technically a misto, not a latte. Oh well – tomato, tomato…I know that didn’t translate in text, but you know what I meant.

Anyway! Next step – pour mixture into your favorite Disney-themed coffee mug…

…and, if you so desire, top with more cinnamon and pumpkin pie spice!

Mmmmm, this was goooood. It wasn’t exactly the same flavors as a Starbucks PSL, but it’s absolutely something I’ll make again! I think next time I’ll add even more pumpkin. 🙂

I love Starbucks but I also like Coffee Bean. Did you hear that Starbucks is going to start serving a lighter blend of coffee, because a lot of people think their blends are too strong? It’ll be interesting to try!
